Preheat oven to 400º. Line 2 baking sheets with parchment paper or silicone baking mats
lay a large piece of parchment on a work surface and your puff pastry down on top, ensuring a generous perimeter of parchment.
Spread Boat Sauce evenly across the pastry square. Follow with parmesan, and sesame seeds if desired.
Take another large sheet of parchment and lay over the top. With a rolling pin, roll the toppings into the puff pastry and and create an extra inch of surface all around.
Remove the top sheet of parchment. With a pizza cutter or knife, first cut in half crosswise, then in half inch strips lengthwise.
working next to your baking trays, pick up a piece by both ends, and twist the dough into a pleasing spiral shape. Fill up your sheets, 2 rows per sheet. Before they go into the oven, sprinkle with a bit of flaky salt, if you wish.
Bake at 400 degrees for 12-15 minutes, until pastry is nicely toasted. Let cool for a couple minutes before delicately removing from baking sheet.
