Bobbie's Best Cheese Straws

I hesitated on creating this recipe since using store-bought puff pastry goes against my "make it as complicated as can be" mentality around baking.  But not only are they easy to make, they are too good not to share .  Keep puff pastry in your freezer with the knowledge that you can create a showstopper in less than 25 minutes!

makes 35-40 straws

Ingredients

  • 1 sheet (½ package) frozen puff pastry, thawed. 
  • 3 Tbsp Bobbie's Boat Sauce (I like Hot!)
  • ½ cup finely grated Parmesan cheese 
  • Toasted sesame seeds (optional) 
  • Fleur de sel or flaky sea salt (optional)

Preparation

  1. Preheat oven to 400º.  Line 2 baking sheets with parchment paper or silicone baking mats
  2. lay a large piece of parchment on a work surface and your puff pastry down on top, ensuring a generous perimeter of parchment.  
  3. Spread Boat Sauce evenly across the pastry square.  Follow with parmesan, and sesame seeds if desired.  
  4. Take another large sheet of parchment and lay over the top.  With a rolling pin, roll the toppings into the puff pastry and and create an extra inch of surface all around. 
  5. Remove the top sheet of parchment. With a pizza cutter or knife, first cut in half  crosswise, then in half inch strips lengthwise.  
  6. working next to your baking trays, pick up a piece by both ends, and twist the dough into a pleasing spiral shape.  Fill up your sheets, 2 rows per sheet.   Before they go into the oven, sprinkle with a bit of flaky salt, if you wish.
  7. Bake at 400 degrees for 12-15 minutes, until pastry is nicely toasted.  Let cool for a couple minutes before delicately removing from baking sheet.
